Boise, ID—A short course on the Food Safety Preventive Controls Alliance (FSPCA) Preventive Controls for Human Food Course will take place here Feb. 19-21 at the Boise Airport Holiday Inn.

The workshop will be led by Jeff Kronenberg, food safety specialist and assistant professor at Tech- Help at the University of Idaho.

Attendees should have prior knowledge of food safety and HACCP. The course is specifically designed for director/vice president of food safety, maintenance managers, production supervisors, production leads, sanitation supervisors, plant managers, quality assurance coordinators, safety managers, training supervisors, lead technicians, packaging supervisors and regulatory personnel.

The first day of the course will begin with an introductory session on FSPCA preventive controls for human food, followed by discussions on food safety plans, GMPs and other prerequisite programs, biological food safety hazards; chemical, physical, and economically motivated food safety hazards; and preliminary steps in developing a food safety plan.

The second day of the workshop will focus on hazard analysis and preventive controls determination, process preventive controls, food allergen preventive controls, sanitation preventive controls, and supply chain preventive controls.

The final day of the course will begin with a session on verification and validation procedures, followed by discussions on recordkeeping procedures, recall plans, and a regulation overview – cGMP and hazard analysis and risk-based preventive controls for human food. Kronenberg will wrap up with a session on resources for preparing food safety plans and a quiz.
