Breaded Chicken Cutlets (6)

INGREDIENTS

2 pounds boneless chicken breast

1 cup all-purpose flour

4 eggs

2 Tbls. water salt and pepper to taste

4 cups bread crumbs

1 cup of fine grated Parmesan cheese

1/4 cup oil for frying

2 Tbls. butter

1 lemon cut in half

DIRECTIONS 1. Cut each breast in half, season with salt and pepper and place between two sheets of plastic wrap or inside a gallon Ziploc bag. With a meat mallet, gently pound until each breast is about as thick as your little finger. Dredge in flour. In a shallow dish, beat the eggs with 1 tablespoon water. Coat the breasts with egg mixture. Mix the Parmesan cheese into the bread crumbs, then dredge the egg-coated breast into the bread crumb mixture.

2. Heat 1/8 cup oil and the butter in a heavy skillet over medium heat. Fry chicken over medium heat until golden brown, about 5 minutes on each side. Drizzle with a quick squeeze of lemon juice.

Garlic Butter Pasta (8)

INGREDIENTS

1 package of wide egg noodles

1 stick of butter

4 minced cloves of garlic

2 Tbls. of half and half

1 teaspoon of salt

1/4 Tbls. of pepper

1/2 cup of good Parmesan cheese (not the stuff in the green can)

2 tsp. of fresh basil, rough chopped

DIRECTIONS

Cook pasta as directed on package.

Melt butter in skillet on medium high. Add garlic and sauté. Drain pasta; stir in butter and garlic, half and half, salt and pepper, Parmesan cheese and basil.

Bacon Green Beans (8)

INGREDIENTS

1/4 cup and

2 Tbls. unsalted butter

1-1/2 (14 ounce) packages frozen green beans

9 thick slices bacon, chopped

3/4 onion, chopped

3 cloves garlic, chopped

1-1/2 tsp. paprika

1/4 tsp. ground black pepper

1 chicken bouillon cube, crushed

DIRECTIONS

Melt butter over medium heat in a large skillet. Stir in green beans, bacon, onion and garlic; cook and stir until onions are translucent, about 2 minutes. Add paprika, black pepper and crushed bouillon cube. Cover; reduce heat to low. Simmer until vegetables are tender, about 20 minutes.
