Try this frittata and enjoy a lighT meal

While the spring days are mild and the mornings carry a medley of scents from the blooming flowers and fresh cut grass, now is the perfect time to consider having a late morning meal outdoors. Brunch is usually a laid-back menu consisting of breakfast and lunch foods, and may even touch on the fringe of dinner fare. The important thing to consider is variety. The menu should have selections that encompass savory and sweet. Mimosas are a southern brunch tradition, so if serving alcoholic cocktails consider light offerings like champagne, mimosas, Bloody Marys and Ramos Fizzes. For those who do not wish to imbibe, coffee, tea and juice should always be available. When creating your brunch menu consider the number of guests and save your labor-intensive recipes such as individual omelets or eggs to order for small groups.
