At Capricho Colombian Steakhouse, opening tomorrow in Brookline, traditional Colombian flavors get an innovative twist.

For owners Vanessa Dorta and Carlos Gomez, opening their doors marks the fulfillment of a long-held dream. The couple met while employed at an Italian steakhouse 15 years ago; he was working in the kitchen and she was a server. As they fell in love over dishes of pasta and arancini, they dreamed of a steakhouse that showcased flavors from their own cultures.

Dorta hails from Venezuela and Gomez grew up in Medellín, Colombia. While planning the menu, Gomez took traditional dishes and flavors from South America and fused them with high-end culinary techniques. Steak lovers will find a filet mignon in a passionfruit béarnaise sauce, New York sirloin with chimichurri and a bone-in ribeye with coffee butter.

“We are not a traditional Colombian restaurant,” said Dorta.

“We’re trying to elevate our food in a unique way that hasn’t been seen before. [Gomez] is taking the flavors from when he was cooking with his mom and incorporating them into the experience.”

The wine list focuses on South American wines from Argentina and Chile and the cocktail menu uses Colombian and Venezuelan spirits and fresh-squeezed juices. Dorta says they’ll offer a Kosher rum for the heavily Jewish community in Brookline.

“We want to be respectful and welcoming to all cultures,” she said.

Dorta wants to create a welcoming, family-friendly environment on both floors. The ground floor features a bar and a mural by a Colombian artist of El Valle del Cócora, the region where Colombian coffee is ground. The upstairs floor will double as private event space. Capricho has an entertainment license and the restaurant will regularly host live music and cultural performances.

For five years, Dorta and Gomez ran Christo’s Pizza in West Roxbury, learning the ins and outs of managing a team, balancing books and marketing a business. When their landlord decided not to renew their lease, they decided to close Christo’s and take the plunge into Capricho.

Capricho Colombian Steakhouse is located at 1627 Beacon Street in Washington Square in Brookline, in the former La Voile space. Tomorrow, they’ll host an opening celebration complete with live music, Colombian folk dance and the full debut of the menu. Following the opening event, the restaurant will be open every evening for dinner.

Dorta and Gomez hope that Capricho can become a meeting ground for friends old and new and proof that Colombian food and fine dining are a perfect pairing.

“I want visitors to feel at home,” said Dorta. “Like they have something totally different and unique at their table.”
