A bill recently approved by the General Assembly radically changes the gambling picture in Illinois. Three major things occur. The legislation expands the number of casinos from 10 to 15 throughout the state, allows slot machines at racetracks and brings slots to the Illinois State Fairgrounds in Springfield.

However that can only be accomplished with a massive transfer of money from other elements of society, including the poor who would frequent slots at tracks or the new casinos. In order for the good old days of horse racing to be sustained, people must enter into a new order of being losers at the slots.

Basic instructions for cooking tortillas
The traditional way of making tortillas is to add the egg-plus-filling mixture to a hot, oiled skillet. When the eggs begin to solidify on the bottom, the tortilla is flipped upside down onto a plate, the skillet wiped out and re-oiled; the tortilla is then slid back into the skillet.

Steam the asparagus or cook in a little boiling water until just barely tender, then immediately rinse under cold water until the pieces are cool. Drain thoroughly on a tea towel. Reserve the tips separately for garnish..

Heat 6 T. of the olive oil in a very large skillet over medium heat, add the onions, thyme and vinegar, and stir to combine them with the oil. Sprinkle with a teaspoon of salt. Cover the pan, and let the onions sweat until they are translucent, 10 –15 minutes.

Potato tortilla filling
Heat the 3 T. oil a nine- or ten-inch nonstick skillet on high until it’s hot but not smoking. Add the onions and stir to coat them. Reduce the heat to medium low and continue to cook, stirring occasionally, until the onions are soft and golden. Remove from the heat and cool completely.
