Lemon adds zest

Lemon zest can add some brightness and extra flavor to many different foods. Along with adding flavor, lemon zest (or peel) add a variety of vitamins, minerals and fiber to your diet. Here are a few dishes you can add lemon zest: salads, seafood, roasted vegetables and grilled chicken.

EASY RECIPES
Simple yeast rolls

• 1 pkg. active dry yeast
• ¹⁄ ³ cup sugar, divided
• ½ cup warm water (105 to 115 degrees)
• ½ teaspoon salt
• ¼ cup butter, softened
• ¼ cup shortening
• ½ cup boiling water
• 1 egg, beaten
• 3 to 3½ cups all-purpose flour

Dissolve the yeast and 1 teaspoon sugar in the warm water. Let stand about 5 minutes. Combine remaining sugar, salt, butter and shortening in a large bowl. Add boiling water and stir until butter and shortening are melted. Cool slightly. Add dissolved yeast, stirring well. Add egg and 1½ cups flour, beating at medium speed until smooth. Gradually stir in enough remaining flour to make a soft dough. Place in a well-greased bowl, turning to grease top. Cover and let rise in warm place, free from drafts, about 1 hour or until doubled in bulk. Punch dough down and turn onto a wellfloured surface. Knead several times.Shape into 2-inch balls and place in greased pan. Cover and let rise in warm place until doubled. Bake at 375 degrees 20 to 25 minutes until golden. Makes about 1½ dozen rolls.

On-the-Go Potatoes

• 24 oz. petite yellow potatoes
• 2 t. olive oil
• 2 T. soy sauce
• 1 C. panko crumbs
• ¼ C. tuxedo sesame seeds
• 2 t. Chinese 5-Spice seasoning mix

Put potatoes in a bowl and toss with the olive oil and soy sauce. Mix to coat well. In a separate bowl, combine panko bread crumbs, sesame seeds and 5-spice seasoning and mix well. In small batches, put the potatoes in the bread crumb mixture and roll around to coat well. Transfer to a cookie sheet. Bake at 450 degrees for 20 to 25 minutes, until cooked through. — Brandpoint
